The biryani பிரியாணி
Our biryani is golden, not fiery red. The spice stays in the background so every grain tastes of slow-cooked meat. Food writers have called it subtle and a little more golden than most. We take that as a compliment.
The regulars' order குஸ்கா · பரோட்டா
Ask a North Madras regular what to order and you'll hear the same three things. Biryani rice without the pieces, a soft flaky parotta, and a bowl of mutton gravy to bring them together.
Chef's note Start with the Chettinad chicken soup. It's peppery and worth it.
